Spanning 2 floors of the Storys Building at King and Duncan in the heart of Toronto’s entertainment district, Byblos opens to the public today with a thoughtfully renovated 2,000 square feet of space including the dining room, bar and lounge area.

It’s the latest in the series of highly anticipated destinations by Charles Khabouth and Hanif Harji and their succession of successful hot spots including Patria and Weslodge.

It boasts being the first Eastern Mediterranean restaurant in Toronto and aims to pay homage to traditional ingredients and classic cooking techniques while also incorporating modern cooking methods and local ingredients with spices and flavours that showcase the Eastern Mediterranean region. The menu is designed by Executive Chef is Stuart Cameron who also happens to be the executive chef of the same Patria and Weslodge.

Colours, tastes and textures were abound in the tapas that were sampled at the opening preview. Each bite was as boldly delicious as it was colourful.

Besides delicious Eastern Mediterranean cuisine, it’s evident that Khabouth and Harji can’t resist making Byblos a premium cocktail destination as well, with “House Alchemist”, Wes Galloway.

I do love really good cocktails and of the varieties sampled, none disappointed including twists on the Old Fashioned and Mint Julep. Bitters and garnishes made from scratch.

All the right ingredients are there to make Byblos a success. So I’m really looking forward to sitting down and have a full-on meal with cocktails here soon!
